What's not in it
We said "no" to a lot. Here's why it matters.
Most "clean" beef sticks hide behind clever labeling. We don't. Every ingredient we excluded was a deliberate choice. And if you know what to look for, you'll understand exactly why.
-
No celery powder
A common "natural" loophole for nitrates. If you see it, you're getting hidden nitrates, no matter what the front label claims.
-
No citric acid
Usually corn-derived, often GMO with black mold. A gut irritant that has no place in a healing food.
-
No nightshades
No paprika, no chili. AIP-safe from day one — not an afterthought.
-
No "natural flavors"
An industry catch-all that can hide dozens of additives. If we can't name it, it's not in there.
What's in it
Simple, intentional, nourishing.
-
Pasture-raised beef
From our regenerative farm partner. Raised on grass, the way beef is meant to be raised.
-
Beef heart + beef liver
Nature's most nutrient-dense foods, blended seamlessly so even picky eaters won't notice. No organ taste, just deep, nourishing nutrition.
-
Live culture fermentation
Not vinegar-acidified like conventional meat sticks. Traditionally fermented with a live culture, making this a genuinely gut friendly snack food.
-
Raw honey
Real, raw honey — not sugar, not syrup. Feeds the fermentation cultured and virutally none is left after fermentation.
-
Organic onion + garlic powder
Organic, no anti-caking agents. Just clean seasoning.
-
Sea salt
That's it. The full list.
How it compares
There's nothing else like it.
Why it costs what it costs
Real food costs more than fake food. Here's the honest math.
What you're actually paying for
Small-batch, traditionally fermented meat takes time, skill, and genuinely good ingredients. We're not a factory. We're working with a US regenerative family farm in Wisconsin, using a multi-day fermentation process, and sourcing organs that most processors throw away; because they're the most nourishing part of the animal.
Live culture fermentation alone takes significantly longer than conventional methods. You can't rush it. You can't fake it.
The Founding 500 price is a genuine "thank-you" to the people who believed in this before the first batch shipped. After this batch, the price goes up, and it should. This is a founding gift.
Where it comes from
A farm we trust. A process we believe in.
These sticks are made in partnership with a small regenerative US family farm in Wisconsin: the kind of operation where the owners know their animals by name and take personal pride in every batch. We spent a long time finding the right partner before we ever started recipe development.
The beef is pasture-raised on regeneratively managed land. The processing is done in small batches, with the same care you'd give food you were making for your own family. Because that's exactly what this is.
This first batch — the Founding 500 batch — is being made right now. Labels are in production. Your bundle ships in June.
From Marisa
Why I made this.
"I've been feeding my family according to ancestral principles for years: meat stock, fermented foods, organ meats. But having a high quality snack we can bring along on busy days? That was always the hard part. I spent years looking for a beef stick I could actually trust. I kept finding celery powder, citric acid, 'natural flavors' — all the things I'd taught my community to avoid. So I stopped looking and started making."— Marisa Tolsma, Bumblebee Apothecary
This is the snack I wanted for my own family, and couldn't find anywhere else. The Founding 500 are the people who are helping me bring it to life. I don't take that lightly 💛
Questions
Good questions, honest answers.
When does it ship?
We're targeting June or early July 2025. Labels are being submitted for USDA approval now. As soon as they're approved and printed, production runs immediately. We'll email every pre-order buyer with a shipping update the moment we have a firm date.
Does it taste like organs?
No. The organ blend is seamless — you taste savory, fermented beef. The heart and liver are there nutritionally, not as a flavor statement. Even picky kids don't notice.
Is this AIP and GAPS compatible?
Yes. No nightshades, no citric acid, no celery powder, no natural flavors, no sugars, no starches, no fillers. This was designed for gut-healing families from day one.
What if I'm not satisfied?
Because these are a perishable food product, we're unable to accept returns. But we stand fully behind every batch. If your order arrives damaged, there's a quality issue, or something isn't right, reach out within 14 days of delivery and we'll make it right: replacement, store credit, or refund. We're a small operation and we care about every single order. Just contact marisa@bumblebeeapothecary.com and tell us what happened. Your happiness is our priority!
Does it need refrigeration?
Shelf-stable unopened. Once opened, enjoy within a few days or refrigerate. Perfect for lunchboxes, road trips, and the diaper bag.
